"making hummus has always been a bit of a challenge for me because i’ve struggled to come up with a recipe that results in a creamy and perfectly flavorful hummus. however, over quarantine, i’ve experimented quite a lot and i’ve come up with a recipe that is guaranteed to result in a fresh, smooth, and aromatic hummus 🤤🥰

ingredients:
- 3 cans of chickpeas (do not drain the liquid in the can)
- 2 tablespoons salt
- 1 tablespoon cumin
- 8 whole cloves garlic
- 1 cup Greek yogurt
- 1/2-3/4 cup chickpea liquid
- 1/2 cup tahini
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 3 tablespoons finely chopped parsley
- 1 teaspoon red Aleppo pepper
- 1 teaspoon sumac

recipe:
1. dump 3 cans of chickpeas (with the liquid) into a pot on medium heat, and add your cumin, 4 whole cloves of garlic, and 1 tablespoon of salt
2. wait until this mixture boils, then reserve 3/4 cup of chickpea liquid and drain the rest
3. in a food processor add the drained chickpea mixture, olive oil, lemon juice, tahini, 1 tablespoon of salt, 4 cloves of garlic, Greek yogurt and blend for 1-2 minutes
4. while blending this, gradually add the reserved chickpea liquid until the mixture in the food processor is smooth (add 1-2 tablespoons of extra olive oil if you want the mixture to be smoother)
5. if needed add extra salt, to taste
6. plate up the hummus, and garnish with the parsley, sumac, and Aleppo pepper
