  • 1 1/2 tablespoons white miso paste
  • 1 3/4 cup cashews, soaked in water overnight
  • 5 apples, peeled and sliced thinly
  • Juice of 1/2 lemon
  • 1 tablespoon ground cinnamon
  • 4 tablespoons coconut sugar
  • 1 1/2 tablespoons apple cider
  • 2 tablespoon coconut oil
  • Pinch of sea salt
  • 1 prepared pie crust (homemade or store bought)


  • Step 1

    Fill a large pot with water and add chopped apples. Bring water to a simmer and cook, covered, for 30 minutes.

  • Step 2

    Transfer half of the cooked apples into a bowl and place the other half into the blender.

  • Step 3

    Add the soaked cashews, lemon juice, cinnamon, coconut syrup, apple cider, and coconut oil to the blender. Blend everything until thick and creamy. Stream through a sieve to remove any chunks or apple pieces.

  • Step 4

    Pour the pureed apple mixture into a cooled crust. Set in the freezer for 1 hour, then top with the remaining sliced cooked apples.
