ingredients

  • 2 teaspoons canola or vegetable oil
  • 1 tablespoon sesame seed oil
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 whole carrot, shredded or thinly sliced
  • 1/2 cup fresh broccoli, cut into florets
  • 1/2 cup gourmet blend mushrooms, sliced or torn
  • 3 tablespoons Annie's Organic Sesame Ginger Dressing
  • 2 cups cooked rice, chilled
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 2 eggs
  • 2 green onions, thinly sliced
  • 2 teaspoons chopped cilantro
  • 1 teaspoon lightly salted cashews, roughly chopped

Method

  • Step 1

    Heat oils in a wok or large skillet over medium heat, then add onions and garlic, sautéing until onions are translucent, approximately 5 minutes.

  • Step 2

    Add carrots and broccoli, cooking until tender, approximately 5 minutes.

  • Step 3

    Add mushrooms, Annie’s Organic Sesame Ginger Dressing, rice, salt and pepper flakes, stirring until well combined. Turn off heat.

  • Step 4

    In a separate pan, over medium heat, fry 2 eggs sunny side up.

  • Step 5

    To plate, divide rice in half on each plate, top each portion with 1 egg, then garnish with green onions, cilantro, and cashews. Salt and pepper to taste.
