ingredients
- 2 teaspoons canola or vegetable oil
- 1 tablespoon sesame seed oil
- 1/2 small onion, finely diced
- 2 cloves garlic, minced
- 1 whole carrot, shredded or thinly sliced
- 1/2 cup fresh broccoli, cut into florets
- 1/2 cup gourmet blend mushrooms, sliced or torn
- 3 tablespoons Annie's Organic Sesame Ginger Dressing
- 2 cups cooked rice, chilled
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 2 eggs
- 2 green onions, thinly sliced
- 2 teaspoons chopped cilantro
- 1 teaspoon lightly salted cashews, roughly chopped
Method
Step 1
Heat oils in a wok or large skillet over medium heat, then add onions and garlic, sautéing until onions are translucent, approximately 5 minutes.
Step 2
Add carrots and broccoli, cooking until tender, approximately 5 minutes.
Step 3
Add mushrooms, Annie’s Organic Sesame Ginger Dressing, rice, salt and pepper flakes, stirring until well combined. Turn off heat.
Step 4
In a separate pan, over medium heat, fry 2 eggs sunny side up.
Step 5
To plate, divide rice in half on each plate, top each portion with 1 egg, then garnish with green onions, cilantro, and cashews. Salt and pepper to taste.
