"Saffron Mussels – Oh my gosh were these amazing! This is a spin on a Barefoot Contessa mussel recipe, but we’ve turned it around to be @Whole30 compliant, and btw they were absolutely delicious. Before steaming the mussels, I sauteed shallots and garlic. I get the most delightful fresh saffron at my neighborhood Middle Eastern store and added some, along with parsley, thyme, salt and pepper.Delicious! We doubled the portions to have leftovers, so check back to see what we did with them!"

Note from Teri Turner: We used chicken stock to keep this recipe Whole30 compliant. Steam the mussels for 10 minutes and finish with coconut milk before devouring.
