"Louvi me to kolokoui - Black eyed beans with marrow slash zucchini (courgette, if you’re in the UK). A mix of a pantry staple and fresh greens. So simple, but when dressed well, it’s heaven. Plenty of good quality EVOO, lots of lemon, parsley and salt. We love this with homemade Cypriot village bread (recipe on nikolettaskitchen.com) and a tuna salad. If you ate this every day, you’d be as fit as Popeye."
