Strawberry Walnut Salad

"Are you in a summer heat wave? We are. As soon as I walk outside I’m immediately hugged by hotness (and no I’m not talking about Bradley Cooper or Ryan Gosling, I’d die). This Summer Lovin’ Salad will get you through the heat. It’s the last recipe of my Keep Your Kitchen Cool Series and it’s a huge hit. It takes two bowls, a knife and fork – so you’re not heating up your house and you’re also not doing dishes!"

For the Salad


  • 5 cups baby spinach
  • 1 cup arugula
  • 1/4 cup halved walnuts
  • 1/2 cup halved strawberries
  • 1/4 cup crumbled feta cheese

To Make the Salad


  • Step 1

    In a large bowl toss together all of your ingredients. Make this your own, add less or more of whatever your favorites are. Right before serving, drizzle on your dressing.

For the Dijon Lemon Honey Dressing


  • 1/4 cup Dijon mustard
  • 3 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon honey
  • 1 pinch salt
  • 1 drizzle olive oil

To Make the Dijon Lemon Honey Dressing

  • Step 1

    In a bowl, whisk together all of the ingredients. This dressing will be strong in flavor but that is necessary for the raw spinach and arugula. A heavy-handed drizzle is all you really need. This makes 4-6 servings.
