For the Salad
- 5 cups baby spinach
- 1 cup arugula
- 1/ 4 cup halved walnuts
- 1/ 2 cup halved strawberries
- 1/ 4 cup crumbled feta cheese
To Make the Salad
Method
Step 1
In a large bowl toss together all of your ingredients. Make this your own, add less or more of whatever your favorites are. Right before serving, drizzle on your dressing.
For the Dijon Lemon Honey Dressing
- 1/ 4 cup Dijon mustard
- 3 tablespoons freshly squeezed lemon juice
- 1/ 2 teaspoon honey
- 1 pinch salt
- 1 drizzle olive oil
To Make the Dijon Lemon Honey Dressing
Method
Step 1
In a bowl, whisk together all of the ingredients. This dressing will be strong in flavor but that is necessary for the raw spinach and arugula. A heavy-handed drizzle is all you really need. This makes 4-6 servings.
