For the Popsicles
ingredients
- 1 cup meyer lemonade, recipe below
- 1 cup full fat coconut milk
- Fruit, of choice, cut into chunks
To Make the Popsicles
Method
Step 1
In a blender, combine your lemonade and coconut milk together. Blend until it's homogenous, about 30 – 60 seconds.
Step 2
In your popsicle mold, add in your fruit. Make sure to only add in a few pieces of fruit so that your handle/stick can go all the way into the popsicle.
Step 3
Pour your lemonade coconut mixture into the popsicle molds all the way to the top. Add your handle. Freeze overnight.
Simple Meyer Lemonade
ingredients
- 3/4 cup sugar
- 4 cups water, divided
- 5-6 meyer lemons, juiced (1 cup)
- 1 cup ice
Simple Meyer Lemonade
Step 1
Bring the sugar and 3 cups of water up to a boil just until all of the sugar is completely dissolved. This will allow the lemonade to be sweetened without the crunch of sugar. Let your simple syrup cool.
Step 2
In a pitcher, pour the simple syrup, lemon juice, your 1 cup of water and add 1 cup of ice. You can add more water if you want a more diluted lemonade.
