Happy almost weekend, friends! How has your week been? We’ve been trying to slam as many recipe shoots as we can for a super secret upcoming project deadline, and a lot of them have been hearty, winter-style, comfort dishes. We’re craving some light, easy veggies right now. One of the our favorite recipes is this rice bowl with spicy baked tofu and charred broccoli. We mix it with shredded carrots and red cabbage to add color and crunch, and drizzle the whole thing with a creamy vegan miso-kimchi dressing which gives the whole thing a wonderful funky-spicy flavor. It’s healthy, colorful, tasty as heck, and just what we need to get our dose of good veggies before the next big winter stew shoot. Recipe link in bio!
