Pasta with Lemony Kale Pesto

"Life is a combination of magic, kale and pasta! Who is with me? Pasta with Lemony Kale Pesto. This is such a perfect dish. Lemon gives the kale pesto a nice touch and making your pesto with kale is just another way to eat more of it and feel good. Happy New Week my gorgeous friends! Hope your week is off to a great start! This month has been the busiest one by far. It’s definitely teaching me how to balance my life better and stay focused on things that are more important to me. Things could get crazy when you juggle so many things at once and there is no one to delegate the tasks to. Some days I wish I could clone myself.   • 1 1/2 pounds Tuscan kale
  • 3 garlic cloves
  • 1/4 cup pine nuts
  • 1 cup olive oil
  • 2 nutritional yeast
  • 1 tablespoon lemon zest
  • 1/2 teaspoons salt and pepper


  • Step 1

    Blends the pesto ingredients in the @vitamix until smooth.

  • Step 2

    Cook 1 pound of your favorite pasta according to the directions.

  • Step 3

    Meanwhile, Take 1/2 cup of cherry tomatoes and sauté in 2 tbsp of EVOO until plump and add the prepared kale pesto, cook for 2 min until bubbly.

  • Step 4

    Add the cooked pasta and gently fold until the sauce is well combined. Add a handful of fresh kale and spinach leaves and toss the pasta again. Serve pasta with roasted line nuts. Enjoy!
