ingredients

  • 2 cups cashew milk, or soy
  • 1 teaspoon apple cider vinegar
  • 1/2 cup coconut yogurt, or soy yogurt
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon flax meal
  • 2 tablespoons coconut sugar, optional
  • 2 teaspoon vanilla extract
  • 1/2 teaspoon vegetable oil
  • pinch of salt
  • Oil spray for frying

Method

  • Step 1

    Combine the batter ingredients in a high speed blender. Your batter should be thinner than a pancake batter. Leave it aside for 5 min. If batter not thin enough, add more liquid.

  • Step 2

    In a non stick pan, spray the cooking oil and pour and 1/3 cup of batter onto the pan. Spread the batter by moving the pan in circles. Cook in a high heat 2-3 min on each side. Repeat. Serve the crêpes with fresh fruits.
