ingredients

  • 1/2 cup probiotic dairy free yogurt drink
  • 1 cup soy milk, or almond milk
  • 1 tablespoon chia seeds
  • 1/2 cup applesauce
  • 1 tablespoon apple cider vinegar
  • 1 1/3 cups all purpose flour
  • 1/2 cup quinoa flakes
  • 2 tablespoons coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil, melted, plus more for cooking
  • Fruit, for serving
  • Non-dairy vanilla yogurt, for serving
  • Maple syrup, for serving

Method

  • Step 1

    Mix all ingredients to make the batter. Set aside for few minutes. and cook until golden brown on both sides. Serve pancakes with fresh fruits and non dairy vanilla yogurt and maple syrup

  • Step 2

    Melt 1/2 teaspoon of coconut oil in a pan and scoop the pancake batter into the pan, leaving space between each. Cook until golden brown on both sides, about 3-4 minutes each. Serve with fresh fruit, non-dairy vanilla yogurt and maple syrup.
