"Lemon Drizzle & Almond Flapjacks! My tiny mum had 5 of these for lunch the other week. Getting hang of going to bed early and being stricter with actually forcing myself to get some good sleep, and I'm hoping it pays off today, for another 10-5pm of lectures!"

Lemon Drizzle & Almond Flapjacks

Ingredients:

1/2 cup (100g) coconut oil

1/2 cup (100g maple syrup)

Half the zest of a lemon

Juice of half a lemon

Add 1/2 cup (30g) ground almonds

2 cups (175g oats)

Directions:

Set oven to 180 degrees.

In a pan, melt coconut oil, and mix with maple syrup, grate in half the zest of a lemon, and lemons juice. Add ground almonds, and oats.

 

Spread into a square shape on a lined baking tray and bake for 10-12 mins.

Cut into pieces, mix a couple tbsp icing sugar with the rest of the lemon juice and drizzle on top. Zest the lemon on top, and lightly toast some flaked almonds to sprinkle on as well.

Enjoy with tea!
