Quick And Easy Vegan Curry

"Hi guys. Sharing today's lunch with you, a quick curry, easy to make but super yum! Curries are one of those dishes I could always eat as they can be so versatile. Just throw in whatever veggies you can find and there you go. ohhh and look what I've learned from the talented Steph @jarsandbowls: an avocado flower! (serves 2) Ingredients: - 1 cup rice (basmati) - 2 cups water - 1 can coconut milk (400ml) - 1/2 cup spring onions, chopped - 1 garlic clove, chopped - 3 tbsp parsley - 1 tbsp curry powder - 2 tsp turmeric - 2 tsp safflower - salt and pepper to taste - 2 cups spinach leaves - pumpkin seeds - sesame seeds - 1 avocado 1.) Put rice and water in a cooking pot on max. heat. Once it is boiling, set on medium heat and let cook until all the water is gone. 2.) In the meantime in another pot braise lightly the onions and garlic and then add the coconut milk together with curry, safflower, turmeric, parsley, salt and pepper. Add the spinach leaves to the sauce and let everything cook for just a few minutes until the spinach has "shrunk" a bit. 3.) Serve rice together with the curry sauce and add 1/2 sliced avocado on each plate, top with some sesame and pumpkin seeds and safflower. Enjoy!
