These coconut kiwicha balls are the perfect snack to take on the go!

Ingredients:

1/4 cup popped amaranth (kiwicha)
1/4 cup shredded coconut
3/4 cup raisins or pitted dates
1/2 cup gluten-free rolled oats
2 tbsp raw agave nectar
1 tsp vanilla extract or powder

Directions: 


Add all of the ingredients except for agave and raisins/dates to a food processor, process until well combined, add the raisins/dates and process until it is crumbly, then add the agave and process again until the mixture forms into a dough, roll into 12-15 balls and through some more popped amaranth.
