Asian Buckwheat Noodle Salad

This Buckwhat Noodle Salad by @NattEats is simple, filling and delicious. It comes together fast thanks to the help of Annie's Shiitake Sesame Vinaigrette. Just chop the vegetables, cook the noodles and toss!

  • 6 ounces buckwheat noodles
  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • 1/2 cup edamame
  • 1/3 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1 small red bell pepper, thinly sliced
  • Annie's Shitake Sesame Vinaigrette
  • Sesame seeds, (optional), for garnish


  • Step 1

    Cook buckwheat noodles according to directions on the package. Rinse with cold water and drain well.

  • Step 2

    Place in a large bowl. Add in cut up veggies and toss with Annie's Shitake Sesame Vinaigrette. Garnish with sesame seeds.
