Asian Buckwheat Noodle Salad

- 6 ounces buckwheat noodles
- 1 cup carrots, julienned
- 1 cup cucumber, julienned
- 1/ 2 cup edamame
- 1/ 3 cup green onions, chopped
- 1/ 4 cup cilantro, chopped
- 1 small red bell pepper, thinly sliced
- Annie's Shitake Sesame Vinaigrette
- Sesame seeds, (optional), for garnish
Cook buckwheat noodles according to directions on the package. Rinse with cold water and drain well.
Place in a large bowl. Add in cut up veggies and toss with Annie's Shitake Sesame Vinaigrette. Garnish with sesame seeds.
