Gingerbread Linzer Cookies with Raspberry Jam

ingredients
- 1 1/4 cups almond flour
- 1/4 cup arrowroot flour
- 1 teaspoon ginger
- a pinch salt
- 2 tablespoons melted coconut oil, or grapeseed oil
- 3 tablespoons maple syrup
- Raspberry jam, for filling
- Powdered sugar, optional
Method
Step 1
Sift the dry ingredients into a medium mixing bowl. Add the oil & maple syrup and mix until soft dough forms.
Step 2
Flour a clean surface with almond flour, and roll the dough to 1/2 inch thick. Using linzer cookie cutters, create cookies with your favorite shape. Bake at 350ºF for 8 to 9 minutes or until golden brown on the edges.
Step 3
Let the cookies cool. Add 1/2 teaspoon raspberry jam to half the cookies, then sandwich with the remaining cookies. Sprinkle with powdered sugar if desired.
