  • 4 medium red potatoes,
  • 6 garlic cloves,
  • 2 dried chillis,

Method

  • Step 1

    Using a mortar and pestle, pound the potatoes for 2-3 minutes till it’s stretchy. It should have a consistency similar to cheese pull. Dip your fingers in water and roll the potatoes in small balls, set aside.

  • Step 2

    In a deep pot heat oil over medium high heat. Add onions and cook for 2-3 minutes.

  • Step 3

    Add tomatoes, garlic, red chilies and timur or szechuan pepper. Cook until reduced to half.
