Steamed Baby Artichokes With Garlicky Breadcrumbs And Olive Oil Balsamic Dipping Sauce

Ingredients
1 pound baby artichokes, trimmed and halved
1 lemon, sliced
kosher salt, to taste
1 cup breadcrumbs
1 garlic clove, minced
Olive oil, as needed
2 tablespoons balsamic vinegar
Directions
Preheat the oven to 400˚F. Mix the breadcrumbs with the garlic and add enough olive oil to make the mixture look like wet sand. Add a bit of salt to taste. Spread the breadcrumbs on a parchment lined baking sheet and place in the oven. Cook until golden brown and toasty, about 10 minutes. Keep a close eye as this mixture can burn quickly.
In a pot with a steamer insert, heat about 2 inches of water to a boil and add the prepared artichokes and sliced lemon. Cover and steam until tender about 7-9 minutes.
When the artichokes are done, top each one with a spoonful of the breadcrumb mix. Serve with a mix of olive oil and balsamic vinegar for dipping.
