Vegan Rainbow Bowl With Tzatziki

Ingredients:
- 6 yellow cauliflower florets - 1 tbsp edamame
- 1 tbsp yellow corn
- 1 tbsp kidney beans - 5 tomato slices
- 8 zucchini ribbons - 1/2 cup shredded purple cabbage
- 1/2 cup of green kale - 1 carrot shredded into ribbons
- 1 red Fresno pepper (diced)
- 2 tbsp of cooked quinoa mixed with a 1/4 tsp of beetroot powder
- 2 tbsp of cooked quinoa mixed with a pinch of Spirulina powder
- 2 tbsp of cooked quinoa mixed with a 1/2 tsp of turmeric powder

Arrange your ingredients in a plate or bowl & make it pretty.
Makes 1 serving.

To make the vegan coconut mayo: - 1 can of full fat coconut unsweetened milk - 3 cloves of garlic
- half a lemon, juiced
- 1/4 cup of avocado oil
- 1 tsp Celtic sea salt 


Blend all the ingredients together until smooth. Makes 1 jar of mayo that will last up to 2 weeks in the fridge.
