ingredients

  • 175 grams fresh blueberries
  • 1 tablespoon cornstarch
  • Juice from 1/4 lemon
  • 2 tablespoons agave syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method

  • Step 1

    Preheat oven at 190°C. Add all the ingredients above in a small bowl and mix them gently. Transfer the filling into a small baking dish (mine was a 10 cm diameter deep baking dish).

For the crisp

  • 2 heaping tablespoons oats
  • 1 heaping tablespoon light brown sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • Dash of cinnamon
  • 1 tablespoon room temperature coconut oil

  • Step 1

    Add all the ingredients above into a small bowl and mix until well combined. Add the crisp layer on top of the blueberries and distribute it evenly over the filling. Bake for 35 minutes at 190°C, until golden brown and bubbly.
