Spiced Pinto Beans

serves 2-3
Ingredients
2 cups pinto beans, from can, drained and rinsed
4 tomatoes, chopped
1 bag of spinach
1/2 red onion, chopped
Salt and black pepper
1 tsp red chilli flakes
Cumin, to taste
Cinnamon, to taste
Juice of 2 limes
olive oil, as needed
cooked brown rice, for serving
Directions
Heat 1 tbsp olive oil in a deep pot and add the onion. Add a pinch of salt and black pepper and cook until onion is golden, about 5 minutes..
Add the beans, tomatoes and spinach and mix well. Add chilli flakes, some cumin and cinnamon, lime juice and let it cook for 10 mins. Taste and adjust seasoning as needed. Serve with brown rice.
