ingredients

  • 3 pieces bacon
  • yellow onion
  • 6 spears Chopped asparagus
  • 1 Handful Spinach
  • 1 Handful Arugula
  • To Taste Olive Oil
  • To Taste salt, pepper, garlic powder
  • 6 eggs
  • 2 tablespoons almond milk
  • 1 Roasted Sweet Potato

Method

  • Step 1

    Start off by grabbing a 12 inch​​ pan. I used my @staub_usa cast iron. Add bacon chopped and cook on medium heat until almost cooked through.

  • Step 2

    Remove bacon from the pan, then add in a tiny drizzle of EVOO, 1/2 a small yellow onion diced and cook up then throw in chopped aspargus.​

  • Step 3

    I used leftover cooked Asparagus so if using fresh, cook for longer in the pan. Throw in a few handfuls of Spinach and Arugula and top with oil and salt and pepper and garlic powder.

  • Step 4

    Then beat up the eggs with a little bit of almond milk seasoned with salt and pepper.

  • Step 5

    Add eggs to the pan and stir around then throw in the oven at 400 for 10 min and cook until eggs are done. Let cool then serve with some Roasted Sweet Potatoes!
