"Remember the perfectly imperfect-perfect figs from yesterday? Here they are in my rustic version of Fig Almond Cake. This lightly sweetened cake is made with a combination of almond & spelt flours, olive oil & dairy-free. Flavored with hints of cinnamon, cardamom, vanilla & meyer lemon zest. A combination of Kadota & Black Mission figs, sprinkled with crushed slivered almonds adorn the top creating jammy fig pockets in each golden bite. Perfectly suitable for breakfast/brunch, dessert or tea time. Recipe is an update to the fig quick bread from a few posts ago. Also read why I'm so gaga over all things almond. To make this gluten free, simply substitute the spelt flour in the recipe for another 1/4 cup of almond flour, or your favorite gluten free flour blend.
