Chocolate Quinoa Granola

ingredients

  • 1 cup quinoa, (rinse the quinoa in cold water and let it dry for 7-10 minutes)
  • 1 cup rolled oats, use gf oats for a gluten free option
  • 1/3 cup chia seed
  • 1/2 cup pumpkin seed
  • 1/2 cup hazelnut
  • 1/2 cup almonds, (roughly chopped)
  • 1/2 coconut chips
  • 1 teaspoon cinnamon
  • 3 tablespoons cocoa powder
  • 1/3 cup coconut oil
  • 1/2 cup maple syrup
  • 2 tablespoons honey
  • 1 tablespoon coconut sugar, optional
  • Pinch of salt to taste

Method

  • Step 1

    Preheat oven to 350°F

  • Step 2

    Cut all nuts roughly or leave them whole. Leave a handful of nuts & seeds for later

  • Step 3

    Place all ingredients in a bowl and mix until everything is well combined

  • Step 4

    Smear the granola on a sheet with parchment paper. Let it bake in the oven for 30 minutes. Check the granola every ten minutes to avoid burnt granola parts (I've made that mistake,lol)

  • Step 5

    After 30 minutes, lower the heat to 212°F (100°C) and let the granola sit for another 45-60 minutes, depending on your oven

  • Step 6

    Let the granola cool completely. Break the bigger granola parts apart with your hands,add the leftover nuts and eat it right away. But, If I was you I would serve it with some whipped greek yogurt, banana,maple syrup,almond butter and strawberry or whatever fruit you have in your fridge. Enjoy ma friend!
