Apple Almond Cake

  • 2 red apples, cored and quartered
  • 1 tablespoon lemon juice
  • 3/4 cup all purpose flour
  • 1/2 cup almond flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • a pinch of nutmeg, optional
  • a pinch of salt
  • 1/2 cup butter, at room temperature
  • 3/4 cup milk
  • 2 eggs, at room temperature
  • 3/4 cup cane sugar
  • 1/4 cup sugar
  • 1/4 cup almond paste, grated
  • 1/4 cup almond slices

Flour mix


  • Step 1

    Preheat oven to 390ºF. Butter and flour a springform pan.

  • Step 2

    Toss apples with lemon juice. Set aside. Mix all dry ingredienst (except for the sugars) in a bowl and set aside

  • Step 3

    Mix flours, cinnamon, baking powder, nutmeg and salt in a bowl.

  • Step 4

    Melt butter in a small saucepan. Add milk and whisk until well incorporated. Set aside.

  • Step 5

    In a separate bowl, whisk eggs and sugar until light and fluffy. Add in the grated almond paste. Add in dry ingredients and fold in with a spatula. Pour in butter mixture and fold in gently.

  • Step 6

    Pour batter into prepared pan. Top with apple slices. Sprinkle with cinnamon, sugar, and almond slices. Bake for 1 hour. Let cool in pan for at least 10 minutes.
