ingredients

  • 3 large sweet potatoes, sliced into 1/4 inch rounds
  • 2 tablespoons olive oil, divided
  • 1 tablespoon cumin, divided
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper, divided
  • 1 pound ground turkey
  • 4 cloves of garlic, minced
  • 1 lime, juiced
  • 1 teaspoon paprika
  • 1 package Cascadian Farm ‘Powered by Plants’ Brown Rice, Corn, Black Beans, & Red Bell Pepper
  • 1 10-ounce can diced tomatoes with green chilies
  • 1/2 cup fiesta blend cheese
  • cilantro, sliced avocado, salsa, or sour cream, for topping, optional

Method

  • Step 1

    Preheat oven to 500 degrees F. Line a baking sheet with foil.

  • Step 2

    Toss sliced sweet potatoes with 1 tablespoon olive oil, ½ tablespoon cumin, ½ teaspoon salt and ½ teaspoon pepper until well coated.

  • Step 3

    Place seasoned potato rounds in a single layer on baking sheet. Bake for 30 minutes until cooked through, flipping halfway through.

  • Step 4

    While sweet potatoes are baking, heat 1 tablespoon olive oil in a medium skillet. Add ground turkey, garlic, remaining cumin, salt, pepper, lime juice and paprika.

  • Step 5

    Scrape turkey onto a plate. In the same skillet, cook theCascadian Farm ‘Powered by Plants’ Brown Rice, Corn, Black Beans, & Red Bell Pepper using directions on the package.

  • Step 6

    Once fully cooked, add the turkey back to the skillet, along with diced tomatoes.

  • Step 7

    Spoon the turkey mixture evenly over the sweet potatoes. Top with a layer of cheese and bake until cheese is melted.

  • Step 8

    Garnish with your favorite toppings and enjoy!
