ingredients
- 1 heirloom tomato, roughly chopped
- 2 1/2 cups strawberries
- 2 persian cucumbers, roughly chopped
- 1 red bell pepper, roughly chopped
- 1/2 teaspoon minced garlic
- 1 teaspoon fresh basil
- 1/4 teaspoon sea salt
- 1/2 cup water
- 3 tablepoons olive oil
- 1 1/2 tablespoons balsamic vinegar
- cracked pepper
Method
Step 1
Reserve a handful of strawberries halved the long way for a garnish on the glasses. Roughly chop the rest. Add tomato, strawberries, cucumber and bell pepper, peeled cucumber to a food processor and pulse until smooth. Pour into a large mixing bowl.
Step 2
Add in the basil and garlic. Whisk in the rest of the ingredients.
Step 3
Cover and let chill overnight to allow flavors to marinate. Garnish with sliced strawberries.
