Spiced Pumpkin Pancakes
- 3/4 cup oat milk
- 1/2 ounce juice of lemon
- 1/2 can pumpkin puree
- 1 cup flour
- 3 tablespoons earth balance butter
- 1 teaspoons pure vanilla extract
- 4 tablespoons dark brown sugar
- 2 tablespoons maple syrup
- 1/2 teaspoons baking soda
- 1/2 teaspoons baking powder
- 1/4 teaspoons salt
- 3/4 teaspoons cinnamon
- 1/4 teaspoons nutmeg
- 1/4 teaspoons powdered ginger
- pinch ground cloves
- a big pinch of cardamon
Method
Spiced Pumpkin Pancakes
Step 1
Mix oat milk and lemon juice and let sit for five minutes. This is your substitute for buttermilk.
Step 2
Add melted butter, vanilla, pumpkin, maple syrup, dark brown sugar, and whisk together.
Step 3
Add all dry ingredients. If mixture is too wet, add a tablespoon of flour at a time, and if too thick, add a tablespoon of oat milk at a time.
Step 4
Set stove to medium heat, butter your griddle, and pour batter onto the griddle. Flip when pancakes are bubbling. Cook other side about 1 minute.
Step 5
Top with glazed pumpkin seeds and maple salted pecans and pure maple syrup!

- 1/2 cup pepitas
- 1/2 cup pecans
- pinch salt

Step 1
toss pepitas and pecans in maple syrup and salt. Bake 5-7 minutes at 350. Let cool while you make your pancakes.
