Caramelized Onions
ingredients
- Olive oil
- 2 yellow onions, thinly sliced
- Kosher salt, to taste
- 1 teaspoon granulated sugar
- 1 tablespoon Worcestershire sauce
For the Burgers
ingredients
- 1 pound 80/20 ground beef
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 4 burger buns
- Swiss cheese slices, for topping
- Fresh chopped chives (optional), for topping
Sauce Diane
ingredients
- 2 cups mushrooms, thinly sliced
- 1 shallot, minced
- 1 garlic clove, grated
- 1 tablespoon freshly ground black pepper
- 2 tablespoons cognac
- 1/2 cup beef stock
- 1 sprig of thyme
- 1 tablespoon whole grain mustard
- 1/2 cup heavy cream
- 2 tablespoons cold butter
- Kosher salt, to taste
To make the Caramelized Onions:
Method
Step 1
Heat a pan over medium heat and add a drizzle of olive oil.
Step 2
Add the sliced onions and cook for about 10 minutes, stirring occasionally.
Step 3
Add the salt, sugar, and Worcestershire sauce.
Step 4
Lower the heat and cook for 45 more minutes, stirring often to prevent burning. Set aside.
To Cook the Burgers:
Step 1
Divide the ground beef into 4 equal portions and form into loose patties.
Step 2
Heat a cast iron or stainless-steel skillet over high heat.
Step 3
Add a small amount of neutral oil and place two patties in the skillet. Smash each patty with a spatula until thin.
Step 4
Season with salt and black pepper.
Step 5
Sear each side for about 2 minutes. Add a slice of Swiss cheese on top and cover with a lid until the cheese is melted. Repeat for the remaining patties.
To Make the Sauce Diane:

To Assemble the Burgers:

Add the cooked burgers with melted cheese and spoon the Diane sauce over the top.
Step 3
Sprinkle with chives if desired, and cap with the top bun.
