Rhubarb Brownies with White Chocolate Chips

"These fudgy, moist, vegan brownies have just the right amount of tartness and a bit of spice, thanks to the rhubarb and cinnamon. Sometimes you want to eat rhubarb that isn't in pie, right? White chocolate chips can be replaced with whatever kind of chocolate chips you prefer."

  • 3/4 cup flour
  • 1/2 cup heaping cocoa powder
  • 2 tablespoons flax meal
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup sugar
  • 1/4 cup cinnamon maple syrup
  • 1/2 cup vegetable oil
  • 1/3 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 cup vegan white chocolate chips
  • 1 cup thinly sliced rhubarb


  • Step 1

    Sift the flour, cocoa, flax meal, baking powder, cinnamon, salt, and sugar.

  • Step 2

    In a separate bowl, combine the maple syrup, oil, milk, and vanilla, then gradually add this mixture to the dry ingredients. Stir until evenly mixed.

  • Step 3

    Add the chips and rhubarb to the brownie batter.

  • Step 4

    Pour the batter into a greased 8x8 pan, then bake at 375℉ for about 28 minutes or until an inserted toothpick comes out clean.
