Creamy Cajun Chicken Shells and Cheese

  • 1 box Annie's Deluxe Rich & Creamy Shells & Classic Cheddar Mac & Cheese, set cheese packet aside and prepare shells according to package instructions
  • 2 piece of chicken breasts, diced into bite size pieces
  • 1/2 cup milk
  • 1 tablespoon unsalted butter
  • 1 large red bell pepper, diced
  • 1 cup broccolini (baby broccoli) florets
  • 2 cloves of garlic, minced
  • 1 tablespoon Cajun seasoning
  • Chopped green onions, for serving
  • Grated parmesan, for serving
  • Lemon wedges, for garnishing (optional)


  • Step 1

    Heat a non-stick skillet to medium heat and coat the bottom with 1-2 tablespoons of oil.

  • Step 2

    Season chicken pieces with 2 teaspoons of Cajun seasoning then cook in the skillet for 5 minutes until golden brown on all sides. Remove cooked chicken from the skillet and set aside.

  • Step 3

    Add butter to the skillet. Once melted add garlic, red pepper, broccolini and the rest of the Cajun seasoning. Stir to coat vegetables with butter and seasoning. Cook for 3-4 minutes until vegetables are soft.

  • Step 4

    Turn heat to lowest setting. Add chicken back into the skillet and stir to combine with vegetables.

  • Step 5

    Add Annie's Deluxe Rich & Creamy Shells & Classic Cheddar Mac & Cheese to the skillet. Add milk or half and half to the skillet.

  • Step 6

    Slowly stir to combine and cook for 2 minutes on low to medium heat until everything is creamy and cooked through.

  • Step 7

    Serve warm with lemon, green onion, and parmesan if desired.
