ingredients
- 80 grams unsalted butter, softened
- 50 grams powdered sugar
- 1 egg
- 150 grams cake flour
- 5 grams cocoa powder
- 2 grams matcha powder
- 5 grams matcha powder
Method
Step 1
In a large bowl, add softened unsalted butter and powdered sugar, mix until pale and fluffy.
Step 2
Crack the egg into a separate bowl and whisk. Add egg into the butter mixture in three increments, and whisk well to combine.
Step 3
Add cake flours into the butter mixture. Mix until it forms a dry cookie dough.
Step 4
Divide the dough into half, and add 2g matcha powder into one half. Mix until well-incorporated.
Step 5
Divide the rest half dough into another half, add 5g coco power into one half & 5g matcha powder into another half. Mix them separately until well-incorporated.
Step 6
Shape the chocolate dough into a log.
Step 7
Roll out the bigger matcha dough (the one with less matcha power) into a rectangle (width should be the same as your chocolate log). Place the chocolate log at one end of the matcha dough. gentle roll them together into a bigger log.
Step 8
Repeat step 7 for smaller matcha dough.
Step 9
Wrap the dough in parchment paper and shape the dough into a triangle log. Refrigerate 3 hours or until firm.
Step 10
Unwrap and cut into 1/4-in slices. Place them apart on a parchment paper. Bake at 300°f for 20-25 minutes.
Step 11
Allow to cool before serving
