For the Chocolate Cookies


  • 1 egg yolk
  • 1 cup flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 2/3 cups sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Raspberry jam, optional

To Make the Chocolate Cookies


  • Step 1

    Preheat your oven to 350ºF and line two baking sheets with parchment.

  • Step 2

    Whisk together the flour, cocoa, and salt. In the bowl of an electric mixer, cream together the butter and sugar. Add the egg yolk, milk, and vanilla. Slowly stir in the dry ingredients.

  • Step 3

    Shape dough into one inch balls. Place on a baking sheet and lightly press with your thumb or a measuring spoon. Bake 10 minutes or until the edges are firm.

  • Step 4

    Once the cookies are baked and cooled spoon filling (chocolate ganache or raspberry jam) into the indentation you made before with your thumb.

For the Chocolate Ganache


  • 8 ounces semi-sweet or dark chocolate, chopped
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 teaspoons instant espresso powder

To Make the Chocolate Ganache

  • Step 1

    In a microwave safe bowl, combine the chocolate and cream. Microwave on 30 second intervals until melted and smooth. Stir in the vanilla and coffee powder until dissolved.
