Roasted Mixed Potatoes with Fresh Rosemary

Ingredients:

8 large potatoes of your choice

2 tbsp oil (coconut or olive)

Fresh rosemary or seasoning of your choice - to taste

Directions:
Preheat your oven to 200-225°C (yeah, I know it's hot).

Peel potatoes of choice, chop them, pop them in a large bowl, drizzle with oil. Add seasoning if you like.

Coat them evenly by giving the bowl a little shake, then tip them into a baking paper lined oven tray and roast for 30-35 minutes.
