ingredients
- 1 large ripe banana
- 1 small pineapple
- 1/4 cup desiccated coconut
- 1/4 cup coconut cream
Method
Step 1
Cut the flesh out of the pineapple (it doesn't have to be neat- you'll dig the rest out later with a spoon!), chop the banana and freeze both.
Step 2
Tip frozen fruit, coconut and coconut cream into a food processor or high power blender and blitz until smooth and creamy. Scoop nice cream into the pineapple shell or bowls, decorate if you like, sprinkle with coconut flakes and serve!
