For the Dough
ingredients
- 2 cups strong white bread flour
- 2 cups spelt flour
- 1 teaspoon active dry yeast
- 1 teaspoon salt
- 11 ounces warm water
- 1 tablespoon olive oil
- A handful of semolina or polenta for dusting
For the Toppings
ingredients
- 2 1/2 - 3 cups vegan chocolate spread, store-bought or homemade
- 8 strawberries, quartered
- 1/2 cup blueberries
- 1 cup coconut whipped cream
Method
Step 1
In a large mixing bowl, combine the flour, yeast and salt. Make a well in the middle of the dry ingredients and add the water and oil. Mix together until it forms a dough.
Step 2
Turn out onto a floured surface and knead until smooth and silky. Leave the dough to rest for a few minutes, then cut it into two pieces.
Step 3
Preheat your oven to 425°F. Dust a baking pan with semolina or polenta. On a clean surface, roll out a portion of dough, as thin as you can, and place on the dusted pan. Repeat with the other half of the dough.
Step 4
Cover the middle of each pizza base with a generous amount of chocolate spread and bake for 10–12 minutes, or until the base is crisp and the top bubbling.
Step 5
Add another layer of chocolate spread over your freshly baked pizza. Allow it to cool for a few minutes before topping with berries and a nice dollop of coconut whip.
