ingredients
- 3 plums, halved and pits removed
- 1 tablespoon coconut sugar
- 1 frozen banana
- Handful red grapes, plus more for topping
- 1/3 cup plus 2 teaspoons almond milk
- 1 teaspoon peanut butter, plus more for topping
- Cardamom
- Shredded coconut, for topping
Method
Step 1
Preheat the oven to 340ºF. Sprinkle plums with coconut sugar and spread out on a baking sheet. Bake for 20 minutes, until soft and juicy. Let cool.
Step 2
Add half the cooled plums, banana, grapes, almond milk, peanut butter, and cardamom to taste to a blender. Blend until smooth. Pour into a bowl and top with more fruit and peanut butter!
