Roasted Plum Peanut Butter Smoothie

  • 3 plums, halved and pits removed
  • 1 tablespoon coconut sugar
  • 1 frozen banana
  • Handful red grapes, plus more for topping
  • 1/3 cup plus 2 teaspoons almond milk
  • 1 teaspoon peanut butter, plus more for topping
  • Cardamom
  • Shredded coconut, for topping


  • Step 1

    Preheat the oven to 340ºF. Sprinkle plums with coconut sugar and spread out on a baking sheet. Bake for 20 minutes, until soft and juicy. Let cool.

  • Step 2

    Add half the cooled plums, banana, grapes, almond milk, peanut butter, and cardamom to taste to a blender. Blend until smooth. Pour into a bowl and top with more fruit and peanut butter!
