Vegan Linzer Cookies

Ingredients:
2 cups flour
1/2 cup granulated cane sugar
1/3 cup vegan butter
1 tbsp Vanilla paste
1 tbsp soy milk
1 tbsp Orange zest
Directions:
1. Mix everything and knead into firm dough.
2. Chill in fridge for 30 minutes
3. Roll out thinly and punch out circles. Half of the circles, punch out a little star in the middle.
4. Bake everything at gas mark 6 for 10 minutes
5. Let cool. Spread raspberry jam on whole cookie and sandwich a star cookie on top.
6. Sprinkle with confectioners sugar
