Italian Macaroni and Peas with Ditalini Noodles

ingredients
- 1 tablespoon avocado oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 28-ounce can Tuttorosso Crushed Tomatoes with Basil
- 2 tablespoons sweet basil
- kosher salt, to taste
- black pepper, to taste
- 1 6-ounce can Tuttorosso Tomato Paste
- 2 cans peas, drained
- 1 16-ounce box ditalini pasta
- 1 cup Italian cheese, shredded
- parmesan, shaved, to taste
Method
Step 1
In a large saucepan, heat oil over medium heat. Add onions and garlic, and sauté until tender and warm. Pour Tuttorosso Crushed Tomatoes with Basil into pot, then add basil, salt, and pepper. Let cook for 5 minutes. Fill the 28-ounce empty tomato can with water and pour into pot. Stir in Tuttorosso Tomato Paste and peas.
Step 2
Cover halfway and cook on low heat for 1 hour 30 minutes, stirring occasionally.
Step 3
Meanwhile, cook pasta according to box directions. Once cooked, rinse pasta with cold water and let cool. Add cooked pasta to tomatoes and peas. Stir in shredded Italian cheese.
Step 4
Serve with shaved parmesan cheese, salt, and pepper on top. Enjoy!
