ingredients
- 1 1/2 cups rolled oats
- 1 cup cooked mashed sweet potato/yam
- 1/2 cup sunflower seed butter (or any nut/seed butter you have on hand)
- 2 tablespoon melted coconut oil
- 1 tablespoon chia seeds, soaked in 3 tbsp water for 10 min
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/3 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 1/2 teaspoon nutmeg
- 1/3 cup dairy free chocolate chips
Method
Step 1
Line an 8" x 8" square pan with parchment paper. Preheat the oven to 350℉.
Step 2
Blend oats in a blender to make oat flour. Pour oat flour into a large bowl.
Step 3
To the bowl, add baking soda, powder, and other spices.
Step 4
To a blender, add mashed sweet potato, seed butter, chia seeds, maple syrup, and coconut oil. Blend until it forms a smooth consistency.
Step 5
Add the blended potato mixture to the dry ingredients. Mix. Fold in chocolate chips.
Step 6
Transfer the mixture to the pan and bake for 20 minutes. Cool on a wire baking rack for 30 minutes before eating.
