Sweet Potato Spice Blondies

  • 1 1/2 cups rolled oats
  • 1 cup cooked mashed sweet potato/yam
  • 1/2 cup sunflower seed butter (or any nut/seed butter you have on hand)
  • 2 tablespoon melted coconut oil
  • 1 tablespoon chia seeds, soaked in 3 tbsp water for 10 min
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/3 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon nutmeg
  • 1/3 cup dairy free chocolate chips


  • Step 1

    Line an 8" x 8" square pan with parchment paper. Preheat the oven to 350℉.

  • Step 2

    Blend oats in a blender to make oat flour. Pour oat flour into a large bowl.

  • Step 3

    To the bowl, add baking soda, powder, and other spices.

  • Step 4

    To a blender, add mashed sweet potato, seed butter, chia seeds, maple syrup, and coconut oil. Blend until it forms a smooth consistency.

  • Step 5

    Add the blended potato mixture to the dry ingredients. Mix. Fold in chocolate chips.

  • Step 6

    Transfer the mixture to the pan and bake for 20 minutes. Cool on a wire baking rack for 30 minutes before eating.
