"Have you guys ever opened up a bag of @CascadianFarm frozen Harvest Berries and compared it to the other brands in the freezer aisle? I was actually so surprised at the difference: Small fully ripe strawberries in the Cascadian Farm bag! I actually love this company and their mission statement. They actually care about sustainability! 🫐💙 
Years ago, my husband and I went to their farm stand in WA, and I’ve been buying their frozen goodies ever since. Usually blackberries or raspberries, but this last week I bought the Harvest Berries blend, and that’s when I saw the difference. Anyway, I sure appreciate what this company is doing. 🍓❤️ THESE BARS are Berry Crumble Bars … Paleo, Vegan, Gluten-free, super fast to make and, they are the best! Use fresh or frozen berries to make the recipe. Enjoy!! Recipe link in profile. 👅💜 P.S. I am super proud of this recipe. I got it on the first try and am just SO happy with the pastry dough — same easy dough is the base and the topping, yeee! Delicious, happy filling! & QUICK to make!! :) 💗💞 P.P.S. Recipe Card

For the Crust:

ingredients

  • 2 cup Almond Flour
  • 1/2 cup Tapioca Flour
  • 1/4 cup Coconut Flour
  • 1/4 cup Maple Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda, sifted
  • 1/4 teaspoon Sea Salt
  • 3/4 cup Coconut Oil, melted
  • 1/4 cup Maple Syrup

For the Crust:

Method

  • Step 1

    Preheat oven to 350°F. Line quarter-size sheet pan or 9" x 13" baking dish with parchment paper. Set aside.

  • Step 2

    In a medium size bowl, combine almond flour, tapioca flour, coconut flour, maple sugar, baking powder, baking soda and sea salt. Add coconut oil and maple syrup. Use an electric hand mixer or whisk to combine.

  • Step 3

    Press ¾ of the mixture (reserving ¼ for the topping) into the bottom of prepared pan (no need to press up the sides). Bake for 10 minutes, until golden brown.

Berry Filling

For the Berry Filling:

  • Step 1

    In a medium-size saucepan, add berries, maple syrup, tapioca flour and sea salt. Cook over medium heat, stirring constantly, until thickened, about 6 minutes. The liquid may thicken at first, continue to cook for the full 6 minutes to be sure berries have released their watery juices. Use a spoon to break up any large strawberries. Set aside.

  • Step 2

    Pour berry filling on top of crust, spreading evenly.

  • Step 3

    Spread the reserved crumble evenly on top.

  • Step 4

    Bake for 10 minutes, or until golden brown. Allow to cool, then chill for at least 2 hours before removing from the pan and cutting into squares. Serve chilled.
