ingredients
- 8 ounces bocconcini, preferably in water, like the BelGioioso tubs
- 1 pint cherry tomatoes
- 1 cup mint leaves
- 1 Serrano Pepper, very thinly sliced
Method
Step 1
Drain the bocconcini and cut them in half, cut the cherry tomatoes in half also, and plate.
Step 2
Add the thinly sliced Serrano Peppers.
Step 3
Sprinkle the torn mint leaves on the plate.
Step 4
Finish the dish with a sprinkle of salt and cracked pepper (to taste), and a drizzle of olive oil.
