Caprese with Serrano Pepper

  • 8 ounces bocconcini, preferably in water, like the BelGioioso tubs
  • 1 pint cherry tomatoes
  • 1 cup mint leaves
  • 1 Serrano Pepper, very thinly sliced


  • Step 1

    Drain the bocconcini and cut them in half, cut the cherry tomatoes in half also, and plate.

  • Step 2

    Add the thinly sliced Serrano Peppers.

  • Step 3

    Sprinkle the torn mint leaves on the plate.

  • Step 4

    Finish the dish with a sprinkle of salt and cracked pepper (to taste), and a drizzle of olive oil.
