Muffins with edam, spring onions and chives

  • 275 gram sifted flour
  • 12 gram baking powder
  • 1/2 teaspoons salt
  • 1 tablespoons sugar
  • 3 tabelspoons olive or sunflower oil
  • 240 milliliter milk
  • 1 egg
  • 1/2 cup finely chopped spring onions and chives (in the ratio 2/3 to 1/3
  • 1/2 cup grated edam cheese
  • 1/2 cup grated mozzarela
  • 2 tablespoons finely grated edam cheese


  • Step 1

    Preheat the oven to 200 C and put paper baskets in muffin molds.

  • Step 2

    In a medium size container mix the dry ingredients: flour, baking powder, salt, sugar.

  • Step 3

    In another bowl mix well 1 egg with mixer and then add milk and finally oil.

  • Step 4

    Add wet ingredients into dry and mix and finally add cheese and spring onions and chives. Mix well.

  • Step 5

    Put the prepared mixture in the muffins mold (enough for 12 muffins) and from above sprinkle with a little grated cheese.

  • Step 6

    Bake in preheated oven for about 15 to 17 minutes or until they get a golden. Remove them from the oven and put them on the cooling rack.
