I love the inclusion of the Orange and Endive salad on top of this gorgeous beet risotto! The flavors sound absolutely divine together!

If you would like to make the salad that Mary made as a garnish remove the segments from the orange and combine the orange slices (and juice) with endive and a little olive salt and pepper.
Then add to the top of the risotto once plated and sprinkle with pistachio & mascarpone.
