These plantain nachos are loaded with three different cheeses, avocado creama, pico de gallo, black beans and lots of fresh cilantro! Tip: Added shredded rotisserie chicken for an amped up version or pickled jalapeños for even spicier nachos!!

ingredients

  • 10 ounces plantain chips
  • 15 ounces canned black beans, drained and rinsed
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar cheese
  • 12 ounces pico de gallo
  • 10 ounces avocado yogurt, guacamole or avocado crema
  • 5 ounces Crema Mexicana, creme fraiche or sour cream
  • 1 Lime
  • 1/4 cup fresh cilantro

Method

  • Step 1

    Preheat oven to 350F. Spread plantain chips evenly on a baking sheet.

  • Step 2

    Top with black beans and cheeses and bake for 10-15 or until cheese is melted.

  • Step 3

    Remove from oven and sprinkle chips with pico de gallo, avocado crema, and crema mexicana. Squeeze lime juice over nachos to taste

  • Step 4

    Tip: Added shredded rotisserie chicken for an amped up version or pickled jalapeños for even spicier nachos.
