Zucchini, Broccoli and Pea Fritters with Smoked Salmon

"I love to make a big batch of these and have the leftovers for breakfast. Its full of protein and veggies which, in my opinion, is the best way to start the day. They are also great in lunch boxes, my kids love them."

  • 1 cup zucchini, grated
  • 1 cup broccoli, grated
  • 1 cup frozen peas, thawed
  • 1/4 cup parsley, chopped
  • 3 eggs
  • 3 tablespoons rice flour
  • 1 pinch salt
  • smoked salmon, for serving
  • yogurt, for serving


  • Step 1

    Squeeze the zucchini between your hands to remove any excess moisture.

  • Step 2

    Beat the eggs in a large bowl, then add the broccoli, zucchini and thawed peas and mix together. Add the flour, mix again and season.

  • Step 3

    Heat the oil in a large non-stick frying pan on medium heat. Put a large serving spoon of the mixture in the pan and cook until golden brown on one side, 3-4 minutes, then flip over and cook until golden on the other side, 2-3 minutes. Repeat until all of the batter has been used.

  • Step 4

    Top with a dollop of yogurt and a slice of smoked salmon. Enjoy!
