Soba Noodle Salad

ingredients

  • 4 cups salad leaves
  • 2 cups sugar snap peas
  • 4 figs
  • 2 avocados
  • 1/4 hemp seeds

Soba Noodle Salad

Method

  • Step 1

    Cook soba noodles for 4 minutes in boling water, rinse in cold water and add some olive oil to make sure they don't stick together.

  • Step 2

    Add noodles, salad leaves, sugar snap peas, figs and avocados to a bowl. Top with hemp seeds and tahini dressing (see recipe below)

Tahini Dressing

ingredients

  • 1/4 hulled tahini
  • 2 tablespoons lemon juice
  • 1/4 cup water
  • 2 teaspoons maple syrup
  • 1 teaspoons salt
  • 1 pinch pepper

Tahini Dressing

  • Step 1

    Place all ingredients in bowl and whisk until blended.
