"Where are my coconut fans? 🥥 These delicious No-Bake Chocolate and Coconut Bars are a great snack that won’t send your blood sugar levels flying sky high. ⠀ Coconut oil is the richest natural source of MCTs (Medium-Chain Triglyceride). MTCs can help with improving glucose tolerance. This is because MCTs go straight from the digestive tract into the liver without needing bile to break it down. They are then used for energy rather than being stored in the body like other types of fats. ⠀ I have used extra dark chocolate for the coating. Chocolate is rich in polyphenols and antioxidants that nourish gut bacteria, it’s also rich in magnesium, my favourite mineral to support hormones."

Recipe Card

For the Coconut Filling

ingredients

  • 1 cup coconut butter
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 9 ounces shredded coconut
  • 1 pinch salt

For the Chocolate Coating

ingredients

  • 9 ounces dark chocolate
  • 1 tablespoon coconut oil

For the Coconut Filling

Method

  • Step 1

    Grease and line an 8x8 inch pan with parchment paper.

  • Step 2

    Add coconut butter, honey, coconut oil and salt to a low heated pan. When it’s soft all the way through, pour into a bowl and mix with the shredded coconut. Pour the mixture into the prepared tin.

  • Step 3

    Press the mixture down with your hands or with the back of a spoon to make it level and set in the freezer for 30 minutes, or until hard.

  • Step 4

    Slice the coconut mixture into bars and put them back in the freezer while you prepare the chocolate.

For the Chocolate Coating

  • Step 1

    Melt the dark chocolate and coconut oil in a heat proof bowl over a pot of simmering water.

  • Step 2

    Take the coconut bars out of the freezer. Dip each bar into chocolate, return to freezer to set the chocolate for 10 min. Enjoy!
