Mango and Coconut Chia Pudding

  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 1/4 cup coconut yogurt
  • 1 mango


  • Step 1

    Add coconut milk, coconut yoghurt and chia seeds to a mixing bowl and whisk to combine. I recommend mixing very well until all the chia seeds are incorporated into the milk, wait a few minutes and mix again to make sure there are no clumps. Cover and refrigerate overnight.

  • Step 2

    Place mango into a food processor or blender and combine until smooth. Spoon mango purée into the bottom of the glass, followed by the chia pudding. Serve with a few chunks of mango on top. Enjoy!
