- 1 chicken breast, cut into pieces
- 6 corn tortillas
- 1 teaspoon sweet paprika
- 1 tablespoon ghee
- 1 pinch salt
- 1 pinch pepper
- 1/ 2 cup fennel, shaved or sliced
- 1/ 2 cup sliced red cabbage
- 1/ 2 cup sliced green apple
- 1/ 2 cup sliced lettuce
- 1/ 2 cup sliced radishes
- 1/ 2 cup guacamole
- 1/ 2 lime
- 2 tablespoons mayo
Add salt, pepper and paprika to the sliced chicken and set aside.
Place the tortillas in a hot fry pan and heat them on each side to brown them up a bit. Wrap them in a kitchen towel to keep hot until it's time to eat.
In a medium skillet on medium high heat, add the chicken and cook for 5 to 6 minutes until cooked through. Set aside.
To serve, place a tablespoon of guacamole, chicken and toppings in the warmed tortilla. Drizzle with the mayo and serve with lime wedges to squeeze over. Enjoy!
